I was wondering about that. I was going to pick up the missing ingredients for my salsa (my friend was saying that if it's blended, it's actually chili? Is that right, mithveaen?), so I thought I could pick up some plantains too.


Pick them up Skye… and remind me on Monday about the lentils. I don't work, it's Day of Dead, so I can prepare them.

and here's your birthday gift Skye 🙂

 

This is really easy, all you need is eggplants, tomatoes, onions and green bellpeppers (these are optional, we skip them because the husband doesn't like them)

Cut the eggplants to around 1 cm-thick slices (you can rub them in salt and leave them for 15-20 minutes – my mjom says this takes out the bitter taste in them. I sometimes don't do this and it turns out ok)

Either deep fry the slices – or just drizzle some olive oil and bake them in the oven if you count your calories 🙂

 

Slice the tomatoes and bellpeppers and chop the onions (not finely).

In your oven tray place the ingredients in layers. (tomatoes in the bottom will give a sweet taste, this is what i do)

then eggplants, bellpeppers and onions on the top.

 

Add salt, pepper and your choice of spices (we add a mix of spices that;s called Arabic masala, or maybe it's the same as that all spice thing?) and a little cinnamon because we love love love it.

 

Don't add oil because the eggplants already retained some. just add some water (really little so you don't end up with lots of watery gravey) and cover the tray with foil paper (this is what it's called, no?) and put it in the oven for 30 minutes or so.

 

It's done when the onions are cooked but still a bit crunchy. n

Wow – my very own Help ! scarf. Too cool. Very coincidental too because i just ordered the movie today. I kinda went nuts on Amazon today (Lennon Remaster CD's, Help ! and A Hard Day's Night DVD's). I may need that scarf to keep me warm this winter!

1. If I bake it, what temperature should the oven be?

2. By Arabic masala, do you mean a type of curry powder? I tried googling it, but it the results were x-rated. neil-aspinall

You can do it with any kind of herbs/spice you want actually.. it's just that masala is what we use on most dishes.

What temperature are you cooking at? I looked up a similar recipe that suggested 325 (fahrenheit). I baked the eggplant slices first for 10 minutes, and then everything together for 30 minutes.

OK, I tried making a “veggie burger” last night. It was no good. paul-mccartney (And since when did beans and rice equal 'veggie'?) Has any one tried the CHOW Veggie Burger?

I got a microwavable bento box for Christmas, and I'm eager to try out some recipes (these two look good as sides). The problem is one of the recipes I want to try calls for Ponzu, which has bonito flakes AKA fish flakes. Does any one know of a good substitute?
